Crockpot Chicken and Wild Rice Soup

Crockpot Chicken and Wild Rice Soup
Ingredients
- 1 cup uncooked wild rice blend
- 1 pound boneless, skinless chicken breast
- 1 cup onions
- 3/4 cup chopped celery
- 3/4 cup chopped carrots
- 4-5 cloves garlic, minced
- 2 bay leaves
- 6 cups chicken broth
- 2 cups water
- 2 tbsp seasoning blend or your choice of seasoning
- 3 tbsp butter
- 2 tbsp olive oil
- 1/2 cup all purpose flour
- 2 cups milk
- salt and pepper to taste
Instructions
- Place the uncooked rice, chicken, onions, celery, carrots, garlic, bay leaves, chicken broth, water and seasoning in your crockpot. Cover and cook on high for 3-4 hours.
- In the last 30 minutes of cooking, take our the chicken breast and shred. Then add shredded chicken back in the crockpot.
- Melt the butter and oil in a pan and add the flour. Let cook for about a minute. Then slowly whisk in the milk until all lumps have dissolved. The mixture should thicken and be creamy. Add tot he crockpot and stir to combine.
- Serve and enjoy!
