Crockpot Chicken and Wild Rice Soup

Ingredients
  

  • 1 cup uncooked wild rice blend
  • 1 pound boneless, skinless chicken breast
  • 1 cup onions
  • 3/4 cup chopped celery
  • 3/4 cup chopped carrots
  • 4-5 cloves garlic, minced
  • 2 bay leaves
  • 6 cups chicken broth
  • 2 cups water
  • 2 tbsp seasoning blend or your choice of seasoning
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1/2 cup all purpose flour
  • 2 cups milk
  • salt and pepper to taste

Instructions
 

  • Place the uncooked rice, chicken, onions, celery, carrots, garlic, bay leaves, chicken broth, water and seasoning in your crockpot. Cover and cook on high for 3-4 hours.
  • In the last 30 minutes of cooking, take our the chicken breast and shred. Then add shredded chicken back in the crockpot.
  • Melt the butter and oil in a pan and add the flour. Let cook for about a minute. Then slowly whisk in the milk until all lumps have dissolved. The mixture should thicken and be creamy. Add tot he crockpot and stir to combine.
  • Serve and enjoy!
