Spring Cobb Salad

This Cobb salad is packed with protein, full of color, and quick to make! Big flavor. Minimal effort. That’s the vibe of this salad.
Spring Cobb Salad
Ingredients
Dressing
- 1/2 cup Greek yogurt
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp lemon juice
- 1 tbsp chopped dill
- 1 tsp minced garlic
- 2 tbsp water
- salt and pepper to taste
Salad
- 2 heads chopped romaine
- 4 hard-boiled eggs, peeled and quartered
- 2 cups homemade croutons
- 1 cup sliced radishes
- 1 avocado, sliced
- 4 oz snap peas, trimmed and halved
Instructions
- In a medium-sized bowl, whisk together dressing ingredients. Add water until desired thickness. Season to taste.
- Assemble salad ingredients in a bowl. Drizzle with half the dressing and season lightly with salt and pepper. Serve with additional dressing on the side.
