Spring Cobb Salad

Ingredients
  

Dressing

  • 1/2 cup Greek yogurt
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp lemon juice
  • 1 tbsp chopped dill
  • 1 tsp minced garlic
  • 2 tbsp water
  • salt and pepper to taste

Salad

  • 2 heads chopped romaine
  • 4 hard-boiled eggs, peeled and quartered
  • 2 cups homemade croutons
  • 1 cup sliced radishes
  • 1 avocado, sliced
  • 4 oz snap peas, trimmed and halved

Instructions
 

  • In a medium-sized bowl, whisk together dressing ingredients. Add water until desired thickness. Season to taste.
  • Assemble salad ingredients in a bowl. Drizzle with half the dressing and season lightly with salt and pepper. Serve with additional dressing on the side.
