White Chocolate Raspberry Muffins

Mom doesn’t want flowers for Mother’s Day—she wants THESE! Delicious, light, fluffy, sweet muffins. Make these together for the ultimate gift.
White Chocolate Raspberry Muffins
Ingredients
- 1 cup milk
- 1/2 cup butter, melted
- 1 egg slightly beaten
- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1 cup fresh raspberries
- 1/2 cup white chocolate chips
Muffin Topping
- 1/4 cup butter, melted
- 1/4 cup sugar
Instructions
- Preheat oven to 400 degrees and grease a 12 cup muffin tray.
- Mix the milk, butter and eggs together in a large bowl.
- Stir in the flour, sugar, baking powder and salt until flour is moistened.
- Gently fold in the berries and white chocolate chips.
- Spoon batter into the muffin tin.
- Bake for 24-28 minutes or until golden brown.
- Let muffins cool. Then dip each muffin top in the melted butter and sprinkle with sugar.
