Colombian-Style Milk Pudding

Ingredients
  

  • 1 gallon whole milk
  • 2 cups sugar
  • 4 egg yolks
  • raisins to your taste

Instructions
 

  • Place the whole milk in a saucepan over medium heat and let it boil.
  • Using a fork, remove the cream that forms on top and save it in a container. You will repeat this process until no more cream forms. This step will take about an hour.
  • Mix the sugar and one cup of the remaining boiled milk in a pot until a syrup consistency has formed.
  • Beat the yolks until they are pale and add them to the mixture of sugar and milk. Stir until it is well-incorporated.
  • Add the raisins and the cream we first separated from boiling the milk and mix it carefully. Let it simmer for about 10 minutes without stirring.
  • Transfer your pudding to individual servings and let them cool in the refrigerator until they have thickened.

Ingredients
  

  • 1 galón de leche entera
  • 2 tazas de azúcar
  • 4 yemas de huevo
  • Pasas a tu gusto

Instructions
 

  • En una cacerola, vierte el galón de leche entera y déjala que hierva a fuego medio.
  • Usando un tenedor, retira la nata que se forma hasta arriba y guárdala en un recipiente. Repite este paso hasta que ya no se forme más nata. Este paso tomará aproximadamente una hora.
  • Mezcla el azúcar y una taza de la leche previamente hervida en una olla hasta que se haya formado una consistencia de jarabe.
  • Bate las yemas hasta que estén pálidas y añadelas a la mezcla de azúcar y leche. Revuelve hasta que estas estén bien incorporadas.
  • Añade las pasas y la nata que se preparó al principio y mezcla con cuidado. Deja que hierva a fuego lento durante unos 10 minutos sin revolver.
  • Transfiere las natas a contenedores de tamaño individual y déjalas enfriar en el refrigerador hasta que hayan tomado una consistencia espesa.
