Lasagna Soup

Lasagna Soup
Ingredients
- 1/2 lb ground turkey
- 1/2 lb pork sausage
- salt & pepper to taste
- 1 small yellow onion, chopped
- 3 tsp minced garlic
- 2 tbsp tomato paste
- 24 oz marinara sauce
- 2 tbs fresh parsley, chopped
- 1 tsp oregano
- 1 tsp basil
- 1 tbsp red pepper flakes
- 7 cups chicken broth
- 9 lasagna pieces split into fourths
- 2 cups spinach
- grated parmesan
- cottage or ricotta cheese
Instructions
- Heat large pot over medium heat and add a little olive oil. Add the ground turkey and sausage, add salt & pepper, and cook through. Remove from pan and set aside.
- In the same pan saute the yellow onion and garlic until onion is soft and translucent.
- Add the marinara sauce and tomato paste and stir. Add the herbs: fresh parsley, oregano, and basil. As well as the red pepper flakes. Stir to combine.
- Add the chicken broth, stirring to blend everything together.
- Add the meat back into the pot and bring to a boil.
- Once boiling, add the lasagna noodles and spinach. Cook until the noodles are al dente.
- Serve in a bowl, topped with grated parmesan and cottage (or ricotta) cheese. Enjoy.
