Lasagna Soup

This soup is easy, quick and so comforting for a winter meal. Follow along with our video and don’t forget to tag @nevadamilk when you make it at home.

Lasagna Soup

Ingredients
  

  • 1/2 lb ground turkey
  • 1/2 lb pork sausage
  • salt & pepper to taste
  • 1 small yellow onion, chopped
  • 3 tsp minced garlic
  • 2 tbsp tomato paste
  • 24 oz marinara sauce
  • 2 tbs fresh parsley, chopped
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tbsp red pepper flakes
  • 7 cups chicken broth
  • 9 lasagna pieces split into fourths
  • 2 cups spinach
  • grated parmesan
  • cottage or ricotta cheese

Instructions
 

  • Heat large pot over medium heat and add a little olive oil. Add the ground turkey and sausage, add salt & pepper, and cook through. Remove from pan and set aside.
  • In the same pan saute the yellow onion and garlic until onion is soft and translucent.
  • Add the marinara sauce and tomato paste and stir. Add the herbs: fresh parsley, oregano, and basil. As well as the red pepper flakes. Stir to combine.
  • Add the chicken broth, stirring to blend everything together.
  • Add the meat back into the pot and bring to a boil.
  • Once boiling, add the lasagna noodles and spinach. Cook until the noodles are al dente.
  • Serve in a bowl, topped with grated parmesan and cottage (or ricotta) cheese. Enjoy.
