Creamy Potato Soup
Did someone say comfort food? This one-pot recipe is loaded with bacon and creamy goodness that is sure to be worth repeating.
Ingredients
- 6 strips uncooked bacon, cut into small pieces
- 3 Tbsp unsalted butter
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1/3 cup flour
- 2 1/2 lbs potatoes, peeled and diced into 1” or smaller pieces
- 4 cups chicken broth
- 2 cups milk
- 2/3 cup heavy cream
- 1 1/2 tsp salt
- 1 tsp pepper
- 1/2 tsp ancho chili powder
- 2/3 cup sour cream
- Shredded cheddar cheese, chives, and additional sour cream and bacon, for topping
Instructions
- In soup pot of choice, crisp and brown bacon pieces over medium heat.
- Remove bacon from pot, leave bacon fat.
- Add butter and melt in the pot. Add chopped onion and cook until tender.
- Add garlic.
- Slowly add flour and stir until smooth.
- Stir diced potatoes, chicken broth, milk, heavy cream, salt, pepper and ancho chili powder into pot.
- Bring to a boil.
- Cook until potatoes are tender, then reduce heat to simmer.
- Puree about half the soup in a blender or kitchen tool of choice.
- Return puree to pot and stir.
- Add sour cream and bacon pieces to the pot stirring well.
- Let simmer until ready to serve.
- Scoop into a bowl and top with sour cream, bacon, cheddar cheese and chives.
- Serve.
Notes
Try adding some carrots, celery or other veggies for a bit of a different take on this.
