Broccoli Cheddar Soup

Using every part of edible ingredients is a great way to eliminate waste in the house. Not only are the stems of a broccoli head edible, but when cooked they’re tender and full of flavor. Try making this Cheddar Broccoli Soup recipe at home, it’s packed with protein and is udderly delicious. Broccoli Cheddar Soup

Ingredients
  

  • 1/2 medium chopped onion
  • 1 cup shredded carrots
  • 3 cups broccoli
  • 1 cup shredded sharp cheddar
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups half & half
  • 2 cups chicken broth
  • 1/4 tsp nutmeg
  • salt & pepper to taste

Instructions
 

  • To begin, dice the onion, shred the carrots (if not already shredded), and grate the cheddar cheese and set off to the side.
  • Warm up a larger pot over medium heat on the stove. Add the butter and onions and sautee until soft. Sprinkle the flour over the mixture. Cook and stir over medium heat for 2 minutes.
  • Add half & half and chicken broth & whisk together.
  • Stir in the broccoli and shredded carrots and let it sit for 25 minutes on low heat or until the broccoli and carrots are nice & tender.
  • Add your salt & pepper to taste., along with the cheese and stir until melted. Add in nutmeg if desired and you're ready to serve!
