White Chocolate Raspberry Muffins

Mom doesn’t want flowers for Mother’s Day—she wants THESE! Delicious, light, fluffy, sweet muffins. Make these together for the ultimate gift.

White Chocolate Raspberry Muffins

Servings 12 muffins

Ingredients
  

  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 egg slightly beaten
  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup fresh raspberries
  • 1/2 cup white chocolate chips

Muffin Topping

  • 1/4 cup butter, melted
  • 1/4 cup sugar

Instructions
 

  • Preheat oven to 400 degrees and grease a 12 cup muffin tray.
  • Mix the milk, butter and eggs together in a large bowl.
  • Stir in the flour, sugar, baking powder and salt until flour is moistened.
  • Gently fold in the berries and white chocolate chips.
  • Spoon batter into the muffin tin.
  • Bake for 24-28 minutes or until golden brown.
  • Let muffins cool. Then dip each muffin top in the melted butter and sprinkle with sugar.
  • Enjoy!
