Strawberry Cream Cheese Stuffed French Toast

Strawberry Cream Cheese Stuffed French Toast

Ingredients
  

French Toast Batter

  • 6 large eggs
  • 1 cup half and half
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • 3 tbsp brown sugar (light or dark)

Strawberry Cream Cheese Filling

  • 2 pounds cream cheese
  • 16 oz container of sliced strawberries (thawed)
  • 1 cup powdered sugar
  • 2 tbsp vanilla
  • 1 tsp red food coloring (optional for color)

Strawberry Sauce

  • 1 pound container of frozen strawberries
  • 2.5 tbsp powdered sugar
  • 2 tsp vanilla
  • 1 tsp red food coloring (optional for color)
  • 3 tbsp cornstarch
  • 1/4 cup water

Instructions
 

French Toast Batter

  • Break fresh eggs into a container.
  • Add remaining ingredients and mix together with a wire whip.

Strawberry Cream Cheese Filling

  • Place all ingredients in the mixer, and mix with a paddle until all ingredients are incorporated.

Strawberry Sauce

  • In a stock pot place strawberries, powder sugar, vanilla, red food coloring and heat until it comes to a boil.
  • In a measuring cup take cornstarch and dissolve it in a quarter cup of water.
  • Next, slowly add mixture stirring often, bring to boil and let simmer for 2 minutes to cook out cornstarch.
