Holiday Cookies

Chef David Holman, Assistant Executive Chef at the Atlantis Casino Resort Spa, and About Town Deb shared the perfect cookie recipes to celebrate National Cookie Day and the holiday season. Follow along with them to make at home with the video here.

Ingredients
  

Triple Chocolate Chip Cookies

  • 1 1/4 cups unsalted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup white sugar
  • 3/4 cup packed brown sugar
  • 1 1/2 cups white chocolate chips
  • 1 1/2 cups milk chocolate chips
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup chopped walnuts

Biscotti

  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 3 1/4 cups all-purpose flour
  • 3 eggs
  • 1 tbsp baking powder
  • 1 tbsp anise extract

Instructions
 

Triple Chocolate Chip Cookies

  • Melt butter in a small saucepan. Let butter cool and pour into a large mixing bowl.
  • Add sugars and beat for several minutes, until mixture is creamy. Add eggs and vanilla. Beat for one minute or until eggs dissolve into butter mixture.
  • Combine flour, baking soda, and salt in a separate bowl. Add butter mixture, stirring well. Add chocolate chips and walnuts if desired. Refrigerate cookie dough for two hours or until firm.
  • Preheat oven to 325 degrees F
  • Drop two tablespoons of dough, spaced 2 inches apart on baking sheet. Bake for 10-12 minutes or until the cookies are lightly browned and puffed up. Cool on cookie sheet until they are firm enough to put on a wire rack.

Biscotti

  • Preheat the oven to 375 degrees F. Grease cookie sheets or line with parchment paper.
  • In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into two pieces. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2inch thickness.
  • Bake for 25 to 30 minutes until golden brown. Remove from the baking sheet to cool on a wire rack. When the cookies are cool enough to handle, slice each one crosswise into 1/2 inch slides. Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side. Slices should be lightly toasted.
