Preheat oven to 350°. Place the Brie on a baking sheet covered with parchment paper. Place into the oven and bake for 5-10 minutes, until it starts to soften. (Note: you can cut the top rind off or leave it on, whichever you prefer.)
While the brie is baking, combine the honey, walnuts, rosemary, and dried fruit (if using) in a bowl.
When the brie is done, pull it out of the oven and transfer it to a serving plate. Then top with the honey mixture. You can sprinkle some additional dried fruit or nuts around the plate for decoration.
Serve immediately while warm with crackers or fruit.
