Mexican-Style Cheese Ice Cream

Equipment

  • Wooden bucket  
  • Metal smaller bucket  
  • Kitchen cooking shovel  

Ingredients
  

  • 2.5 cups whole milk 
  • 2.5 oz queso fresco
  • 1 cup sugar or to taste 
  • 1 bag of ice 
  • 1 cup salt

Instructions
 

  • Separate all ingredients in half (2 separate containers). 
  • Blend half of the milk, half of the cheese, and half of the sugar together. Set this mix aside.  
  • Blend the second half of the queso fresco by itself until it has a granular consistency.  
  • Place one layer of ice mixed with salt in the wooden bucket.  
  • Add the metal bucket on top of the first later. Continue adding layers of ice and salt until it tops the bucket. The salt will prevent the ice from melting quickly.  
  • Once the metal bucket is inside of the wooden bucket with the layers of ice and salt on the outside, place the mixed ingredients inside the metal bucket.  
  • Consistently mix the ingredients inside the metal bucket with the kitchen shovel until you start to see a thicker consistency.  
  • Once the consistency starts to get thick, start adding the other half of the ingredients to the mix. Continue mixing with the shovel until you get the ice cream consistency. This step will take about 30-45 minutes (for 4 servings).  
  • The ice cream is ready to serve. Enjoy!
