Greek Yogurt Banana Muffins

Complete with the extra little boost of protein from the yogurt, these fluffy muffins are the perfect mid morning snack!

Ingredients
  

  • 2 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 tbsp butter, softened
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 3 medium bananas, mashed (about 1 cup)
  • 1 cup plain greek yogurt
  • 2 eggs
  • 1 1/2 tsp vanilla

Instructions
 

  • Preheat the oven to 350.
  • Line a muffin tin with baking cups.
  • Whisk flour, baking soda, baking powder, and salt together in a medium bowl.
  • Cream together butter and sugars in a larger bowl. 
  • Add mashed bananas, greek yogurt, eggs, and vanilla, to the larger bowl and mix well.
  • Add flour mixture to wet ingredients and mix until combined.
  • Pour a 1/4 cup of batter into each muffin cup.
  • Bake for 15-20 minutes until the tops are lightly golden.
  • Allow to cool and enjoy!

Notes

Try adding chocolate chips for a sweeter treat!
